I love the idea of eggplant and green beans simmered in coconut milk. I can&#039;t imagine leaving out the chillies....

As for fermented shrimp paste, we&#039;ve started substituting with anchovies. Sure, they aren&#039;t quite the same because they&#039;re missing the fermentation but they do offer a not unsimilar flavour.
