Susan, Definitely had cherry garcia in mind while making this :)

Carolyn, the sable crust had a smooth texture but still retained its grittiness. It was almost pliable and remained firm at room temperature for quite a while, so I think it&#039;s perfect for ice cream cakes.

I can see the same method working for gingersnaps, too.
